Refreshing Summer Salads
I love summer, but it gets so hot here in FL, that most of the time I just want something light and refreshing to eat. These summer salads are perfect to eat on their own, pair with a protein (chicken, steak, shrimp), or serve as a side at an outdoor summer BBQ.
These refreshing recipes are sure to bring a dash of deliciousness to your summer table!
Watermelon Salad with Cucumber and Feta
Ingredients:
1 Watermelon
1 package of Feta Cheese
2 Cucumbers
Salt and Pepper to taste
Chopped Mint and Basil to taste
Squeeze of fresh lime
Drizzle with olive oil
Instructions:
1. Cut up watermelon into 1 inch cubes.
2. Put the watermelon into a serving bowl with sliced cucumber, cubes of feta, chopped basil and mint to taste.
3. Squeeze in fresh lime, drizzle with olive oil, add salt and pepper to taste.
4. Toss everything together and that’s it! A refreshing summer salad!
Tomato Cucumber Avocado Salad
Ingredients:
Cherry tomatoes
Cucumber
Avocado
Red onion
Parsley
Olive oil
Salt and freshly ground black pepper
Instructions:
Add cucumber, tomatoes, red onion, and avocado in a salad bowl.
Sprinkle your chopped parsley over the salad. Pour olive oil over, and then season with salt and pepper to taste.
Super easy and refreshing!
Black Bean Salad
Ingredients:
Black beans
Sweet corn
Tomatoes
Red bell pepper
Avocado
Red onion
Cilantro
Lime
You could also add a little olive oil for extra flavor!
Instructions:
Rinse and drain the black beans.
Rinse and drain the sweet corn (if using canned corn).
Chop the tomato, bell pepper, and onion into small pieces. *If you’re using cherry tomatoes just chop them in half.
Combine all ingredients into a salad bowl. Tip: Wait until you’re ready to serve the salad to add the avocado. Stir the avocado in gently so it doesn’t get mashed.
Add cilantro and fresh squeeze of lime. Drizzle with olive oil to taste.
