Healthy & Easy Chicken Parmesan

This recipe is so delicious that it doesn’t even taste like a “light” version. It is oven- baked instead of fried- so it’s healthy, quick, and delicious! This is one of those dinners that Justin always goes back for seconds, that’s how I know it’s a really good one!

Ingredients

Meat

  • 2 Chicken breasts

Produce

  • 1/2 tsp Garlic powder

  • 1 tsp Oregano, dried

  • 2 tbsp Parsley

Refrigerated

  • 1 Egg

Condiments

  • 1 cup Marinara sauce

Baking & Spices

  • 1/2 tsp Black pepper

  • 1 tsp Kosher salt

Oils & Vinegars

  • 2 tbsp Olive oil

Bread & Baked Goods

  • 1 cup Panko bread crumbs

Dairy

  • 1 1/2 cups shredded Mozzarella

  • 1/2 cup Parmesan cheese

Instructions

  1. Preheat oven. Preheat oven to 400° and spray baking sheet with non-stick cooking spray. Set aside.

  2. Slice and tenderize chicken. Cut chicken in half horizontally to create 4 fillets. Then place fillets in a zip lock bag and flatten with a meat tenderizer.

  3. Coat with egg and bread crumb mixture. Whisk egg in a bowl with salt and pepper. Then place bread crumbs, parmesan and garlic powder in a separate bowl. Dip each fillet in egg, then place in bread crumbs and cover completely.

  4. Bake in oven. Add fillets to baking sheet and bake until chicken is no longer pink in middle, about 20 minutes. Flip halfway through.

  5. Top with sauce and cheese and bake until melted. Remove from oven and spoon 1/4 cup marinara over top. Then place mozzarella & parmesan on top of sauce. Place back in oven on broil until cheese is melted, 1-3 minutes.

  6. Add toppings and serve! Top with fresh basil or oregano if desired. We usually pair the dish with broccoli or fresh green beans, but you could always pair it with pasta if you’d like.
